How to Eat More Beans
In this video I made Rancho Gordo Mayocoba beans using the stove top method and My Best Hummus using canned chickpeas.
Hummus
1 can garbanzo beans(chickpeas), drained (save the liquid)
2 cloves garlic, chopped
1/4 cup your favorite tahini
3 tablespoons freshly squeezed lemon juice
salt to taste
Process in food processor. Add liquid as needed. Season with paprika.
Stove Top Rancho Gordo Method
Sort and rinse beans, looking for pieces of debris.
Soak the beans in cool water, about 2 inches above the beans. Soak for 4-6 hours. Don’t soak longer or they will split apart. If you see them splitting apart after a couple hours, stop soaking them. You can also cook them unsoaked.
In a 12-inch skillet, or 6-quart Dutch oven, saute some finely chopped onions (about ½ cup), a rib of celery, chopped, one carrot, chopped, and a crushed or minced garlic clove. Add a little water if they start to stick. Cook for 3-4 minutes. Add the drained beans to the 6 quart cooking pot and cover the with a couple inches of water. Add the sauteed vegetables. Bring to a boil and boil for 10-15 minutes. Reduce to a gentle simmer and cover with a lid, leaving it slightly ajar. When the beans are almost done, usually after 1 ½ - 2 hours, add salt, if desired. I usually add ½ teaspoon of salt for each ½ pound of dried beans. Be sure to check on the beans from time to time and add boiling water if the water level gets too low. Uncover the beans for the final 15 minutes to allow the broth to evaporate some and develop great flavor.

Cooking beans:
1 pound of dry beans makes 6 cups of cooked beans. For the daily dozen, three ½ cup servings are recommended each day.
From How Not To Die--Beans include:
Beans, canned or prepared from dry
Black beans, black-eyed peas, butter beans, cannellini beans, chickpeas, edamame, English peas, great northern beans, kidney beans, lentils, miso, navy beans, pinto beans, small red beans, split peas, tempeh, tofu
Serving size:
¼ cup of hummus or bean dip
½ cup cooked beans, split peas, lentils, tofu or tempeh
1 cup of fresh peas
On your cooking day make:
A simple pot of beans, either in the Instant Pot or stovetop
If you’re cooking for one or two you can make 8 ounces of dried beans at a time instead of a pound. You’ll have about 3 cups of cooked beans. Use your freshly cooked beans until you run out and then use canned beans.
Day 1: Eat the beans with a grain, such as brown rice or quinoa, farro, etc. or a potato
Day 2: Make a bean recipe such as chili, soup, enchiladas, tacos, bean burgers, baked beans
Day 3: Use the same beans to make summer beans and grain plate
Day 4: Mash the beans to make tacos or tostadas, or enchiladas, bean dip
Day 5: Rinse the beans and use to top a salad, freeze any leftover beans in ½ cup portions
Ways to use beans:
Mung Bean “Egg” for breakfast
Bean dips made with any bean, processed in the food processor with lemon or lime juice, spices and water, tahini (just a little)
Bean salads with summer vegetables-tomatoes, onions, herbs
Hummus with carrots/cucumbers for a snack
Air fried chickpeas for topping salads or as a snack

Black bean brownies
Edamame for snacks (Costco sells individual serving bags)

    I have it on decently expert authority that petting your family dog and not immediately washing your hands is potentially good for you (barring a pet with a known contagious infection probably). Drs Erica and Justin Sonnenberg, PhD researchers specializing in gut microbiome and its effects on human health, pointed out that we get microbe diversity from our environments and having regular low threat immune challenges keeps it trained and busy.     I'm 62 and have been vegan for over ten years and I feel fantastic. I had a medical in March for my job and bloodwork, great, urine, great, blood pressure, great, cholesterol, great, sugars, great. I told my doctor that I eat a plant based/vegan diet and she said that's great, keep it up 👍. I will be vegan the rest of my life

    I've been cooking beans in my instant pot day one. I soak some of them and add all my goodies in it, cook on high 18 to 20 minutes. Just a few hrs to soak. These people who write these books make it hard for people, so they don't want to cook. I use my pot a lot. I always cook from scratch. Always have. I'm 73.

    I started eating more beans this year. I am not strict , thinking I have to eat 3 servings. But I do love beans and discovered rancho Gordon this past year. Love them! This week I’ve been eating butter beans. Our stores don’t have them though.

    Thank you for sharing your story. I struggle with food and over eating and have been trying to “ease into” a wfpb no oil - but maybe the way is to dive in and to try the daily dozen as a challenge. And maybe I too can find the motivation to stick with it. My husband resents that we are not 20 anymore & cannot eat whatever we want & this makes it hard - plus my own feelings about that & yet… this is a truth we have to come to terms with. But I weigh far too much & I think this way of eating can help my issues with pancreatitis and aches & pains. So going to pull out my copy of How Not to Die and try this challenge 🤞🏻🤞🏻Thank you. ❤️

    Thanks for this video, Julia. I love beans of all varieties and will often eat them straight out of the Instant Pot on their own but since I usually cook large batches, your freezing tips and recipes are very helpful. Condolences on the loss of your beloved dog.

    I put some cannelloni beans on my salmon salad. It gassed me up so badly. I took a digestive enzyme and it didn’t help.

      Sometimes it takes a while for your body to adjust to beans. Maybe a few weeks of eating them often.

    Beans absolutely have to be cooked in a pressure cooker to eliminate the lectins or they will destroy the gut. Also being aware of oxalates is essential.

    I have a couple more ideas of eating more beans/legumes. 1) make your own lentil bread (google it) 2) make your own Greek soy yogurt (again, google it) and there is actually a 3) strain the yogurt so it is like a soft cream cheese and spread it on your lentil bread topped with everything seasoning. Yum!

    You soak beans to remove phytates and make them more digestible. It isn't about convenience--thats just a side benefit. Put a T. of vinegar, whey or lemon juice in the water with the beans as they soak to help remove phytates. so you wouldnt want to use the bean water to eat. maybe for garden/plants.

    I am 64 years old and I’ve been plant-based since 2013. I ate meat, cheese and eggs and all the rest. I always felt crappy (I thought it was normal), but once I went Plant based, I felt tremendous! No more gut issues! No more pain! I feel better today than I did in my 20s!
